Favourite Vegan Ice Cream Recipes

Vegan ice cream + rawr chocolate

 

We’re big fans of dairy-free ice cream. It’s so simple to make at home, and we’re getting through buckets of it now the summer’s in full swing!

We use a home ice cream machine (this one), which is super easy to use. A machine’s well worth the investment, but if you don’t have one you can also make ice cream by hand. Just pour the blended mixture into a tub and put it in the freezer, then give it a stir every half hour or so until it’s fully set. You won’t get as soft ice cream as you will if you use a machine, but it’ll still taste good!

Here are our favourite recipes. Feel free to tweak quantities and experiment with your own ingredient additions. As long as you keep the liquid to sweetener ratio about the same, it’s hard to go wrong.

 

Base

Blend:

780 ml coconut milk

320 ml coconut cream

1/2 cup coconut palm sugar or honey

 

Vanilla

Base + 1 tsp vanilla powder

 

Chocolate Chip

Base + 1/2 cup raw cacao powder + 1/2 tsp vanilla

After the ice cream comes out of the machine and is still soft (or, if making by hand, when it’s started to set in the freezer but isn’t fully solid), chop 2 Rawr Chocolate bars or a handful of goji chocolate chunks into small pieces and stir in. Then put in the freezer to set.

 

Chocolate Peanut Butter

Base + 1/2 cup cacao powder + 3 or 4 heaped tbsp nut butter

 

For toppings, we love our raw chocolate goji chunks, fresh fruit, cacao nibs, or a dollop of raw nut butter.

We love recipes made with our chocolate, and recently we’ve been blessed with lots from food and health bloggers! Many are raw and vegan, and easy to make at home on a rainy day.

All you need to get started is some chocolate (our goji chocolate chunks are a discounted way to buy raw chocolate to melt at home, find them here), and a quick trip to the kitchen cupboard or the shops.

Healthy Orange Hot Chocolate — Healthy Living London

And one for cooler nights! Healthy Living London used orange chocolate, but any flavour would work. (Mint hot chocolate? Now that sounds a treat.) Using 15g chocolate, cacao powder, milk or alternative, cinnamon, and coconut oil. Find the recipe here.

We’ve been feeling the love for Instagram lately, and Moni’s Meals is one account we love. Moni used our chocolate as a topping for this scrumptious oatmeal (recipe here). If you haven’t tried chocolate and porridge before, they’re perfect partners.

Rawr Goji Berry Chocolate Now Available in Broken Chunks

Whilst our decision to put whole gojis back in our goji bar is a wonderful development for our taste-buds, it’s making our wrapping machine over-excited. Our new Passion bar breaks much more frequently than our other chocolate bars do — oops!

We’ve turned this into good news. We’re offering these broken bars for sale in various-sized pouches, so you can enjoy them as a snack or use in your own recipes — at a cheaper price than regular bars.

Aside from munching straight from the pack, here are some of our favourite uses:

  • Drizzled melted or grated over fruit and desserts
  • Melted into warm milk (or alternative) for a yummy hot chocolate
  • Added on top of porridge for a decadent breakfast (three to six blocks is perfect)
  • Melted and poured onto homemade raw bars and snacks
  • Used as a replacement for the chocolate / cacao-and-sugar part of raw or cooked recipes
  • Melted and remoulded to make your own raw chocolate treats

A Whole Lot of Gojis!

Goji berry vanilla chunksIf you’re a long-term fan of our goji and vanilla bar, you’ll know it used to contain whole berries, but that a year-or-so ago we switched to a smooth chocolate with goji berry powder. We made the change because our new machinery didn’t like whole berries.

Though we liked the new smoothness, we missed those little red nibbles. So we’re delighted to say that whole organic gojis are back! Not only do they look great in the chocolate, we love their chewiness.

As an added bonus, we now have organic goji berry powder that we can soon offer to our customers. It’s perfect for use in smoothies, desserts, or your own chocolate creations. Send us an email if you’d like to find out more.

Rawr Passion is one of my personal favourites in our raw chocolate bar range. Although I’m not a huge fan of goji berries by themselves, combined with our chocolate and Madagascan vanilla the taste is just simply divine – chewy and fruity and chocolatey all in one go. And with all those whole gojis on top, it’s one of our most pretty and eye-catching bars.

So I was delighted when I saw this review for Rawr Passion on the Chocolate Reviews website. You can read the whole thing here, or have a skim of some of the things the lovely Lee had to say:

“Under the outer wrapping and inner foil there was a bar of chocolate that was more solid than I thought it’d be. Previously the raw chocolate I’ve reviewed was more Wispa-like in texture. This had a much greater density – which actually made it look and feel more like a “normal” bar of chocolate…Also there was a magnificent shine to it that I don’t previously recall as being present with the other raw bars of chocolate I’ve tried…..In terms of flavour: it’s mild, slightly sweet but with a nice smooth taste that belies its lack of processing. It’s very enjoyable.”

Summary: Adapted from Kristen Suzanne’s ‘Ultimate Raw Vegan Chocolate Recipes.’ Quite possibly the nicest raw breakfast I’ve ever had!

Ingredients

  • 1/2 cup raw oat groats, soaked overnight then drained
  • 1 apple, chopped
  • 2 tbsp hemp seeds
  • 1 tbsp raw cacao powder
  • 1 tbsp goji berries
  • 1 tbsp yacon syrup or agave nectar (I generally prefer yacon for everything except making chocolate bars!)
  • Pinch cinnamon
  • Pinch salt (optional)

Instructions:

  • Process everything in your food processor, using the ‘S’ blade. Enjoy!
