Top Raw Recipe Websites
Jan 11th, 2010 by Kendra

Raw recipe books can be a great resource, but there are also some excellent websites out there that offer raw food recipes for free! Here’s a few of the ones we use most here at Rawr:

1. Gone Raw. This was a staple website when we first starting eating raw. It’s perhaps not the easiest to search and use, but there are so many recipes listed and so many members that you’re bound to find something.

2. Raw Food Recipes. Easy to use and pictures for everything. It always helps to know what you’re making is meant to look like!

3. The Daily Raw Cafe. Again, beautiful pictures, and some really yummy recipes. This lady must spend all her free time making raw food and blogging about it!

4. Raw Food Living. Attractive website with lots of recipe ideas, including milks, dressings, mains, cheeses, desserts etc.

5. Loloville. No pictures, but lots of recipes.

6. Living Foods.

7. Have Raw Cake and Eat It. A fab website run by Annette, a raw fooder in the village next to ours.

8. We Like It Raw. Colourful recipe ideas.

A simple internet search will throw up many more websites. If you know of a good one, please feel free to comment and let me know!

Recipe: Courgette Canapes
Nov 28th, 2009 by Kendra

Summary: Adapted from Nomi Shannon and Sheryl Duraz’s ‘Raw Food Celebrations.’ Tangy, tasty courgette canapes, great for serving at raw parties or just for a posh looking dinner for yourself (which is what we made them for!). The end result is quite oniony – feel free to skip some or all of the onions if you’re not keen. Makes 18 courgette roll-ups.

Ingredients

  • 1 1/2 cups sunflower seeds, soaked 8-12 hours
  • 1/2 red bell pepper
  • Juice of 1 lemon
  • 1/4 cup raw tahini
  • 1/4 cup parsley
  • 1/4 small onion
  • 2 spring onions
  • 1 tbsp tamari or Braggs Liquid Aminos
  • 1 clove garlic
  • 1/4 tsp cayenne
  • 3 small courgettes

Instructions

  1. Combine all of the ingredients except the courgettes in a food processor until smooth.
  2. Wash the courgettes and chop off the top and bottom.
  3. Slice the courgettes as thinly as you can, using a mandoline if you have one.
  4. Spread the processed mixture onto one side of each slice, to about 1/4″ thickness.
  5. Place the slices onto a dehydrator tray. Dehydrate at 105-115 degrees for 4 hours.
  6. After 4 hours the courgette should be pliable and the topping getting crispy. Roll each slice in on itself and secure with a toothpick. If you want yours to come out looking a little neater than mine (!) you may want to scrape away the excess mixture which splodges out when you roll each slice.
  7. Dehydrate for a further 18 hours until dry, and up to 36 hours if necessary.

Preparation time: 30 minutes

Number of servings: 18 courgette canapes (serves 2 as a meal or 6 as snacks).

Creamy Pasta Sauce

Creamy Pasta Sauce

Summary: It may not contain cacao, but it’s our favourite recipe find in a long while. Simple, creamy and delicious, a great salad dressing or pasta sauce.

Ingredients

  • 1 cup cashews
  • 3/4 cup water
  • 1/2 garlic clove, minced
  • juice of 1/2 lemon
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • Sprinkle of black pepper
  • Couple of handfuls spinach
  • 1 courgette

Instructions

  1. Grind the cashews first – in your blender if it’s up to it, otherwise your food processor. Get them as finely broken down as you can.
  2. Put all of the ingredients, except the spinach and courgette, into the blender. Blend until the sauce is smooth.
  3. Peel the courgette, then make courgette noodles with the flesh. If you don’t have a spiraliser a vegetable peeler will do fine – just cut long strips. Lay them on top of the spinach in a pasta bowl.
  4. Drizzle the sauce on top.

Recipe: Raw Chocolate Crispy Cakes

Raw Chocolate Crispy Cake

Raw Chocolate Crispy Cake

Summary: Raw chocolate crispy cakes, with not a cornflake in sight! Truly delicious.

Ingredients

  • 3 cups dried coconut (flakes or dessicated)
  • 1 cup dates, soaked overnight and soak water kept
  • 1 cup raw cacao powder
  • 1/3 cup coconut butter
  • 1 vanilla bean, scraped
  • 1/2 tsp salt

Instructions

  1. Set the coconut butter to melt over a mug of hot water.
  2. Make the date paste. Put the soaked dates in your food processor with a little of the soak water and pulse. Continue to add small amounts of water and pulse until you achieve a smooth, paste-like consistency.
  3. Transfer the date paste to a mixing bowl. Add all of the other ingredients, including the melted coconut butter, and mix well.
  4. You should end up with a thick mixture. Add a little more of the date soak water if you feel it’s necessary, although you’re not aiming for stickiness.
  5. Using an ice-cream scoop, scoop up the mixture and press it into the scoop using a spoon.
  6. You can either eat the cakes now or dehydrate for 3-4 hours until warm and crispy on the outside.

Recipe: Homemade ‘Sun’-dried Tomatoes
Nov 10th, 2009 by Kendra

SummaryWith sun-dried tomatoes an ingredient in so many raw dishes, we decided to try making our own. Amazingly easy and really tasty, plus you know they’re truly raw – I don’t think we’ll ever buy sun-dried tomatoes again! I used 3 punnets of tomatoes (1.2 kg) to make half a jar, as pictured.

Ingredients

  • Fresh tomatoes!

Instructions

  1. Wash the tomatoes then slice them to a few mm thickness.
  2. Dehydrate until dry – about 18 hours. To reduce drying time, flip the slices over after 3 hours then dry for a further 11 hours.
  3. If fully dried and stored in an airtight container they should keep for months.

Chopping time: 15 minutes

Recipe: Carob Coconut Balls

Carob Coconut Balls

Carob Coconut Balls

Summary: A yummy, sweet and salty dessert. This recipe makes 4 balls, which is enough for 2 people at one sitting, but you’ll probably want to make at least double as it won’t be long before you’ll be wanting more!

Ingredients

  • 1/2 cup dates
  • 1/4 cup coconut butter
  • 1/2 cup shredded, dried coconut
  • Pinch salt
  • 2 heaped tablespoons carob powder

Instructions

  1. Set the coconut butter to melt in a small container balanced over a mug of boiled water (I use the largest of my measuring cups to melt small quantities of coconut butter in).
  2. Put the dates into your food processor and process until they’re as broken down as you think they’re going to get. If you use juicy dried dates, such as Medjool, you’ll end up with something approaching a paste; if using drier dates you might just get lots of broken pieces.
  3. When the coconut butter’s melted pour it in with the dates, preferably while your food processor’s running.
  4. Add the shredded coconut and carob. Process for a few more seconds until it’s well mixed.
  5. Scoop out chunks with your fingers and mould into balls. If you want to make them look extra pretty you could roll them in more shredded coconut or even chopped hazelnuts.

Recipe: Raw ‘Hot’ Chocolate
Nov 2nd, 2009 by Kendra

Hot choccie

Hot choccie

Summary: A really creamy, milky tasting dairy-free hot chocolate! Believe me, the sunflower seeds do work – they add thickness to the drink without adding sunflower taste.

Ingredients

  • 2 tbsp sunflower seeds, soaked in water for 2 hours or more
  • 1 1/2 cups water
  • 1 tsp carob
  • 1 tsp mesquite
  • 1 tbsp cacao powder
  • 1 tbsp yacon syrup or agave nectar
  • Pinch cinnamon
  • Pinch of salt (optional)
  • Sprinkle cayenne chili (optional)

Instructions

  1. Put everything in a blender and run for long enough that the sunflower seeds are fully broken down.
  2. Pour the mixture from your blender into a saucepan, running it through a sieve as you do so to ensure any chunks of sunflower seeds are taken out.
  3. Heat the hot chocolate to the required temperature, stirring all the while. If you want to keep it raw, stick a finger in as you stir and turn off the heat just before the liquid becomes too hot to be comfortable.
  4. Find a tall mug, pour and enjoy!
