Recipe: Homemade ‘Sun’-dried Tomatoes

SummaryWith sun-dried tomatoes an ingredient in so many raw dishes, we decided to try making our own. Amazingly easy and really tasty, plus you know they’re truly raw – I don’t think we’ll ever buy sun-dried tomatoes again! I used 3 punnets of tomatoes (1.2 kg) to make half a jar, as pictured.

Ingredients

  • Fresh tomatoes!

Instructions

  1. Wash the tomatoes then slice them to a few mm thickness.
  2. Dehydrate until dry – about 18 hours. To reduce drying time, flip the slices over after 3 hours then dry for a further 11 hours.
  3. If fully dried and stored in an airtight container they should keep for months.

Chopping time: 15 minutes
